
This corn bread is gluten free, but you would never know it! Make it for yourself or for a friend/family member who follows a gluten-free diet.
1 ¼ cups gluten-free yellow cornmeal
¾ cup gluten-free all-purpose flour
2 tsp baking powder
½ tsp salt
1 large egg
1 ½ cups milk
3 tbsp butter, melted
1 tbsp honey
1Preheat oven to 400°F. Coat an 8-inch-square baking pan with cooking spray.
2Whisk cornmeal, flour blend, baking powder and salt in a large bowl. Whisk egg, milk, butter and
honey in a medium bowl. Add the liquid ingredients to the dry ingredients and stir until just
combined. Scrape the batter into the prepared pan, spreading evenly.
3Bake the cornbread until a toothpick inserted in the center comes out clean, about 35 minutes.
Let cool for 10 minutes before serving. Serve warm.
